Easter Cinnabunnies Recipe

There’s no doubt in our house, Easter is the best time for baking delicious treats. Maybe even more so than Christmas, dare we say it. Think chocolate Cornflake nests with Mini Eggs, Creme Egg brownies, or the classic Easter egg, whatever your choice, Easter is undeniably the time for sweet treats. 

We love all of the deliciousness but there is one recipe that tops off our Easter charts, every year. The Cinnabunnie. Never heard of a Cinnabunnie? It’s basically a cinnamon roll but shaped like an adorable bunnies head. These treats are super easy to make using remade cinnamon rolls from Jus-Rol or you can get really crafty and make these babies from scratch. Ingredients:

  • 80ml Milk
  • 75g Butter
  • 490g All Purpose Flour
  • 50g Granulated Sugar
  • 1/2 tsp salt
  • 7g active Yeast
  • 56g Butter (melted) 
  • 150g Brown Sugar
  • 2 tbsp Cinnamon
  • 1 Egg
  • 60ml Heavy Cream

For the Icing:

  • 113g Cream Cheese
  • 113g Unsalted Butter (softened)
  • 240g Powdered Sugar
  • 2 tbsp Milk

Instructions:

  1. Place your SMEG saucepan over a medium heat, add milk and butter. Stir until melted then remove from the heat. Add in your yeast and stir.
  2. In a mixing bowl combine 300 grams of the flour, the sugar and the salt. Pour in the warm milk, butter and yeast mixture, stir to combine. Add in the egg and mix to bring together.
  3. Using the dough hook on your stand mixer knead the mixture whilst gradually adding in the remaining flour. 
  4. Lightly coat a large bowl with sunflower oil and place the dough ball inside. Cover with plastic wrap and leave to rise in a warm place for an hour. 
  5. Preheat the oven to 170°C and line a baking tray with parchment paper.
  6. Gently roll your dough into a rectangle, around 1/3” thick. Cut the dough into 2/3 and 1/3 so you have a larger section for the bunnies bodies. Brush the surface of both rectangles with melted butter then sprinkle evenly with the sugar and cinnamon.
  7. Slice the larger roll into 1” rounds and set aside. Cut the smaller piece into 1” strips, folding in each side into the middle to create ears. Press each pair of ‘ears’ onto each bunny body. Pop onto a lined baking sheet. 
  8. Brush with the milk and bake for 15-20 mins.
  9. Mix all the icing ingredients until smooth and drizzle over the bunnies.
